Healthy Food Happy Wallet Conference Speakers 2012
This past Saturday, November 10, 2012 I hosted the first Healthy Food Happy Wallet Conference here is St Louis, MO. At 9am attendees flowed into the SLU’s Allied Health Multi-pupose Room.
Our first speaker of the day was Jeri Villareal owner of Our City Farm located in U-City. Our City Farm produces poultry, fresh eggs and a variety of herbs and produce. Jeri spoke about what all the egg carton labels you see at the grocery store mean. People were shocked to see that many of the labels they thought were good for their families are actually just marketing. She explained how important it is to choose meats from animals that have been treated humanely. Humanely treated animals have less hormones and higher healthy fats like Omega3.


Maude D. Bauschard, Maude’s Market in South City, spoke about saving on and getting better quality produce by using CSA (Community Supported Agriculture) programs. Maude’s market has several CSA option. She explained how CSA programs can work for even the busiest family. Maude explained how purchasing from CSA programs can benefit families and local farmers.

Phoebe Hendricks, GettingFreedom.net, explained how she, a mom of 4, fits bulk buying into her busy life. She showed how to store bulk items and explained what cold storage is and how you can use it to make produce last longer.

Jennifer Windler, HealthyLifeDeals.com , spoke about in-store savings with and without coupons. She explained about how she saves an average of 75% off her grocery bill every week. She showed how coupons work, how to store them, and the best way to plan your shopping trip. She took us on a virtual shopping trip to show how she goes about finding the best in-store deals.


Sisters, Jill Smith and Tracy Gruener , started one of the first Co-Ops in St Louis, Community Helpings CoOp. They explained how the Co-Op can save you money on produce. Tracy, mother of 4, explained how she makes the best use of her produce to make sure it doesn’t go to waste.

Pineapple Scraps
Onion, Carrot, Celery Scraps
Vegetable broth -
3-4 qts water, veg scraps.
Boil for an hour and strain for vegetable broth
Banana Peels
Rub on bug bites and sunburn for relief (cut up and place in ziploc bag in freezer)
Rub on leather shoes to shine them
Orange Peels
Use a peeler to peel the skin without the pith off the orange
Lay out on wax paper for to dry out
Add them to:
Bath Water
Olive oil ( orange infused olive oil)
Add to tea
